Ingredients

– ½ cup vegan butter, room temperature

– 2 tablespoons cane sugar

– 2 tablespoons brown sugar

– 1 teaspoon vanilla extract

– 1 cup all-purpose flour

– ¼ teaspoon baking powder

– ⅛ teaspoon salt (omit if using salted butter)

– 2 sweet red apples, peeled and thinly sliced

– 2 tablespoons sugar

– 1 tablespoon cornstarch (arrowroot powder can substitute 1:1)

– ½ tablespoon lemon juice (lime or freshly squeezed orange juice can substitute)

– ½ teaspoon cinnamon

– ½ teaspoon nutmeg

– ½ cup rolled oats

– ¼ cup brown sugar

– ¼ cup all-purpose flour

– ½ teaspoon cinnamon

– ¼ cup vegan butter, cubed and cold (solid coconut oil can substitute)

Instructions

1-Preheat your oven: First, preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper this makes removal a cinch and keeps things neat. In a mixing bowl, cream the vegan butter, cane sugar, brown sugar, and vanilla extract until it’s fluffy, which takes about 2-3 minutes for that perfect texture. Add the flour, baking powder, and salt, mixing it into a thick dough, then press it evenly into the prepared pan.

2-Par-bake the crust and prepare fillings: Next, par-bake the crust for 15 minutes to set it up nicely. While that’s in the oven, prepare the apple filling by mixing the sliced apples with sugar, cornstarch, lemon juice, cinnamon, and nutmeg until everything is evenly coated that’s where the magic happens! For the streusel topping, combine the rolled oats, brown sugar, flour, and cinnamon, then cut in the cold vegan butter until it’s crumbly and ready to sprinkle.

3-Assembling and Baking: Once the crust is out of the oven, spread the apple filling evenly over it and top with the streusel for that crunchy finish. Bake the whole thing for 30-35 minutes until the streusel is browned and the filling is bubbly your kitchen will smell amazing! Let the bars cool completely in the pan, and for super clean slices, pop them in the fridge for 1-2 hours before cutting. If you want to jazz them up, drizzle with vegan salted caramel sauce before serving YUM!!
