1/2 cup almond milk

1 tablespoon lemon juice

1 tablespoon aquafaba OR 1/2 flax egg (to make 1/2 flax egg: mix 1/2 tablespoon flax seeds with 1 tablespoon warm water, let sit 5 minutes)

1 teaspoon vanilla extract

1/2 cup chocolate chips (3 oz, 85 grams)

1/4 cup chopped peanuts

Instructions

1-First, lightly grease a madeleine pan with vegan butter or spray oil to keep things from sticking. Then, preheat your oven to 350Β°F this step helps the madeleines rise just right. Next, sift together the 1 cup cake flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt; set that aside for now.

2-Melt the 2 tablespoons vegan butter and 2 tablespoons peanut butter together until smooth. Add in the 1/3 cup brown sugar and whisk it all together for a creamy mix. Now, stir in the 1/2 cup almond milk, 1 tablespoon lemon juice, 1 tablespoon aquafaba (or your prepared 1/2 flax egg), and 1 teaspoon vanilla extract until everything is well combined.

3-Gently fold the dry ingredients into the wet mixture with a spatula until just mixed don’t overdo it! Fill each cavity of your prepared pan about halfway with the batter. Bake for around 20 minutes until the edges turn golden and the madeleines bounce back when you touch them lightly.

4-Let them cool completely in the pan before moving on. For the topping, melt the 1/2 cup chocolate chips in the microwave with 30-second intervals, stirring until smooth. Dip the tip of each cooled madeleine into the chocolate and sprinkle with the 1/4 cup chopped peanuts right away. Let the chocolate set before you dig in your vegan peanut butter madeleines are ready to enjoy!
