Instructions
1-Make Donut Dough: Warm non-dairy milk and water to lukewarm (β90Β°F). Dissolve yeast. Combine with sugar, vegan butter, 3 cups flour, salt, and vanilla; mix into dough. Knead 6-8 minutes (dough hook) or 10 minutes (by hand), adding remaining flour if sticky. Place in oiled bowl, cover, let rise 60-90 minutes until doubled.
2-Shape Donuts: Roll dough on floured surface to 3/4-inch thickness. Cut with 3-inch round cutter. Place on floured baking sheet. Re-roll scraps, cut more donuts. Cover, let rise 45-60 minutes until puffed and doubled.
3-Fry Donuts: Heat 3 inches oil to 350Β°F in heavy pan. Fry donuts 60-90 seconds per side until golden. Cool completely.
4-Make Vegan Ganache: Heat coconut cream until almost boiling. Pour over chopped chocolate. Let sit 1 minute, then stir until smooth. Cool to room temperature.
5-Make Vegan Marshmallow Fluff: Boil chickpea brine to reduce volume by half; cool completely. Whip aquafaba until foamy. Add cream of tartar; beat until light. Gradually beat in powdered sugar and vanilla on high speed until stiff peaks form (5-8 minutes). Use immediately.
6-Assemble: Make a hole in cooled donuts. Fill with marshmallow fluff using a piping bag. Dip tops into ganache. Immediately sprinkle with graham cracker crumbs before ganache sets.
