  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 teaspoon kosher salt for the chicken

1/4 teaspoon ground black pepper for the chicken

1/2 teaspoon onion powder for the chicken

1/2 teaspoon garlic powder for the chicken

1/4 teaspoon ground paprika for the chicken

4 tablespoons olive oil (divided) for the chicken

4 boneless, skinless chicken breasts

2 cups broccoli florets, chopped into smaller pieces for the filling

1/2 cup shredded cheddar cheese for the filling

6 ounces cream cheese at room temperature for the filling

1 clove garlic, minced for the filling

Kosher salt and ground black pepper to taste for the filling

Instructions

1-First, set your oven to 375Β°F (190Β°C) and grab an oven-safe skillet. Mix the kosher salt, ground black pepper, onion powder, garlic powder, and ground paprika in a small bowl. Drizzle the chicken breasts with olive oil and rub that seasoning mix all over them for a tasty base.

2-Next, in another bowl, combine the chopped broccoli florets, shredded cheddar cheese, cream cheese, minced garlic, and a dash of kosher salt and ground black pepper. Cut a wide pocket in each chicken breast, making sure not to go all the way through. Stuff each one with that creamy mixture.

3-Heat 2 tablespoons of olive oil in your skillet over medium-high heat. Sear the stuffed chicken for 2-3 minutes per side to get that golden crust. Pop the skillet into the oven and bake for 25-35 minutes until the chicken is fully cooked. Let it rest for a bit before serving it’s worth the wait!
