1012 dried guajillo peppers, stemmed and seeded

1 teaspoon olive oil

1 small onion, chopped

4 cloves garlic, chopped

2 teaspoons coarse sea salt

ยฝ teaspoon cumin

Instructions

1-Start by toasting the dried guajillo peppers in a heated pan over medium heat for about 2 minutes per side until they puff up a bit.

2-Once cooled, soak them in hot water for 20 to 30 minutes until they’re nice and soft, which makes blending easier.

3-Next, place the soaked peppers into a blender or food processor, and save about 1 cup of the soaking liquid if you’d like to use it.

4-In the same pan, heat 1 teaspoon of olive oil and cook the chopped onion until it’s translucent, about 3 minutes, then add the garlic and cook for another minute to release its aroma.

5-Now, add the cooked onion, garlic, sea salt, and cumin to the blender with the peppers.

6-Blend everything together, gradually adding the soaking liquid or fresh water until you get a smooth consistency that suits your taste.

7-If you prefer a silkier sauce, strain it through a fine mesh.

8-This sauce is ready to serve and can enhance dishes like enchiladas or tacos with its rich, earthy notes.
