๐ŸŒถ๏ธ Create a hearty, flavorful soup that brings all the beloved taco flavors together in one comforting bowl perfect for busy weeknights
๐Ÿฒ Transform simple pantry ingredients into a satisfying meal that’s ready in just 25 minutes and customizable with your favorite toppings

  • Total Time: 25 minutes
  • Yield: 6-8 servings 1x

Ingredients

Scale

1 pound ground beef or turkey

4 cloves garlic (minced) or 1 teaspoon garlic powder

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon oregano

1/2 teaspoon smoked paprika

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

28-ounce can of crushed tomatoes (undrained)

4-ounce can of diced green chilies

15-ounce can of kidney beans (rinsed and drained)

15-ounce can of black beans (rinsed and drained)

17-ounce can of corn (drained)

2 cups of chicken broth or broth of choice

Instructions

1-First, brown 1 pound of ground beef or turkey in a large pot over medium heat. Once cooked, drain any excess grease to keep things light. This step builds a solid flavor base for the soup.

2-Next, add the spices and other items: stir in 4 cloves of minced garlic or 1 teaspoon garlic powder, 2 teaspoons chili powder, 1 teaspoon cumin, 1 teaspoon oregano, 1/2 teaspoon smoked paprika, 1/2 teaspoon onion powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Then, mix in the 28-ounce can of crushed tomatoes (undrained), 4-ounce can of diced green chilies, 15-ounce can of kidney beans (rinsed and drained), 15-ounce can of black beans (rinsed and drained), 17-ounce can of corn (drained), and 2 cups of chicken broth.

3-Bring the mixture to a low boil, then reduce the heat, cover, and simmer for 20 minutes while stirring occasionally. For a thicker soup, simmer uncovered for another 15-20 minutes or mash some beans. If you want it even heartier, blend boiled potatoes and add them in. Finish by topping with options like tortilla chips, sour cream, shredded cheese, chopped green onions, chopped avocado, hot sauce, or fresh cilantro for extra flair.

Notes

๐Ÿฅ„ For extra thickness, mash about 1/4 cup of beans against the side of the pot before stirring into the soup
๐ŸŒฎ Make it vegetarian by omitting the meat and adding an extra can of beans or some cooked quinoa
๐ŸงŠ This soup tastes even better the next day, so make a big batch and enjoy leftovers all week
